Dedication
To my dear mother, Neelam Verma. When I told my mom I got my second book deal, her initial response was a fearful Oh no!" She knew that my book deal meant a lot of work for her, in teaching me new recipes and going through the tedious task of standardizing measurements and using measuring tools. My mom cooks by sight instead of with exact measuring tools, which she finds unnecessary as they slow her down. Although she knew she had a busy time coming up, she was still excited for me, and she graciously took time to teach me her quick and easy recipes and to impart her nutritional knowledge to me as a dietician. Thank you Mom for letting me make a mess in your kitchen, and for your time, patience, knowledge, support, and love.

for supporting and encouraging me every day in every way. Whether it's fixing a nerve-wracking computer malfunction, helping with the never-ending pile of dishes, caring for our darling daughter, or tasting and approving all of the fruit and vegetable dishes in this book, he is always there for me. I want to thank my delightful daughter, Jaya, for always finding fun in every situation, even when I had to work long hours on my computer for this book. She would imitate me and bring her own toy computer and sit on her little table with a pencil, notebook, toy cell phone, and calculator.
At the same time, she also had dishes cooking in her play kitchen while I was in my kitchen testing recipes.
