И пока молоко нагревается до температуры пастеризации, эта посторонняя микрофлора вырабатывает кислоту и кислотность молока повышается. В чистом молоке повышение кислотности или совсем не заметно или составляет около 0,1 единицы pH. Более сильное нарастание кислотности говорит о плохом качестве молока.
